English Muffin Mini Pizza

Tomato Mozzarella Basil Mini Pizza

Growing up, my mom would make mini pizzas using English muffins. She would add sauce, cheese and other toppings.  I introduced this creation to my husband, who never had one of these mini delights. I make these for a quick dinner and today I decided to change up the ingredients.

We are trying to watch our added sugar intake, so instead of sauce, I decided to use tomato slices. Along with some grated mozzarella cheese, the meal was complete.

Or so I thought.

As I was making my creation, I remembered that we are currently growing basil in our garden. We love tomato mozzarella basil salad, so why not create this on an English muffin?

Along with some olive oil and salt, the pizza was complete. I baked it for 10 minutes in a 400-degree oven.

Today, I paired it with some cherries, but I’ve done salads in the past, depending on what we have in the refrigerator.

Ingredients:

  • One whole wheat English muffin, sliced
  • Olive oil
  • Tomato slices
  • Salt
  • 1/3 cup of shredded mozzarella cheese (I prefer to buy the block of cheese and shred it myself or use fresh mozzarella. It tastes soooo much better than the pre-shredded cheese, in my opinion!)
  • Basil leaves (I used 4, 2 on each mini pizza)

 

Steps:

  1. Preheat oven to 400 degrees
  2. Brush some olive oil on each English muffin slice.
  3. Add a tomato slice to each muffin slice and sprinkle with salt.
  4. Add cheese, then basil to each muffin slice.
  5. Bake in a 400-degree oven for 10 minutes.
  6. Enjoy!

NOTE: You can make these mini pizzas using sauce and any toppings you chose. It’s the same amount of time in the 400 degree oven. 🙂
